Ok, here’s my version of the Tri-Color Farfalle with Tuna, Spinach and Artichoke Hearts. As it was just John and I eating the dish, I halved the recipe into 4 servings (versus 8).

My version used whole grain rotini pasta and skipped the pepperoncinis. I also must have crammed in my spinach as there was a lot of spinach in my bowl. Still, it was a good, fresh and clean tasting dish. Plus we have lunch for today as well. 

As the calorie count was low (only 172 cals per serving), I went ahead and added .5 oz of feta cheese to our lunch portions today. I love the tuna/feta/artichoke combo and wanted to make sure I wasn’t too hungry in the afternoon. Overall, a very nice dish!
